I am living a crazy dream! It\u2019s a dream as there\u2019s so many beautiful places and memories I collect on the way and crazy as there are all these funny\/sometimes scary situations. It all comes with my slightly older motorhome (25 years old). I already almost lost an exhaust pipe, which we got fixed in Luxemburg, we\u2019ve decided to stay overnight in a beautiful rocky spot and we cracked open our black water container and yesterday I had an obligatory stop over in Warsaw, because another tiny thing couldn\u2019t wait to be fixed. And what a girl does when she doesn\u2019t know what to do? She calls her dad!<\/p>\n

Living in a camper van is an unique experience, it gives you freedom of always changing your mind. If you\u2019re not found of a place, you can go somewhere else, if you fell in love with a hidden beach, you can stay there as long as you like. It gives you so many options. I am a bit curious, which means, that I move around a lot.<\/p>\n

I get many questions how it is to travel with a small kid in a van and how I manage. I do manage, obviously, but the important thing is that it\u2019s super easy. There are things you need to remember about like supplying water tank and having coco for a morning drink, there also are some obligations like emptying a toilet cassette (not cool). But on everyday basics, it\u2019s just awesome. The feeling of waking up on a beautiful beach or next to a lake, when your kid still sleep and you can admire a view in silence with a cup of coffee is priceless. Everyday life is good as well, just imagine that you have to clean only a few meters, not whole apartment. Living in a van also teaches you a minimalistic approach to life and shows that you don\u2019t need many things. The same goes with food. I do eat well and Mia could as well, but she keeps asking for a chocolate cake. The secret is to not use too many ingredients, because you cannot fit too much in your super tiny kitchen. If you think that your kitchen is small, I assure you that mine is way smaller.<\/p>\n

This is a great breakfast for a van and not only. It\u2019s easy to make, quite fast and you can leave it in a fridge for a night (but not necessarily). We had it a couple of times already and it\u2019s a hit!<\/p>\n

YOU WILL NEED:<\/p>\n

    \n
  • 1 medium apple, grated<\/li>\n
  • \u00bd banana, smashed<\/li>\n
  • 1 tsp lemon juice<\/li>\n
  • zest from \u00bc lemon (just a bit for a flavour)<\/li>\n
  • \u00bc tsp honey<\/li>\n
  • 1 tsp chia seeds<\/li>\n
  • fruits to garnish<\/li>\n<\/ul>\n<\/div>\n
    \nMix everything in a small bowl and leave for at least 30 minutes. Serve with fruits on top and nuts if you like.<\/p>\n
